IMG_20150219_144341_kindlephoto-60131208Moist chicken is achieved when you steam the chicken on the inside as you roast the chicken on the outside. The best way to achieve this is to use a pottery vertical baker.

A Vertical Baker is a pottery dish with a deep interior and a center well. The center well is filled with a liquid. (You can also put herbs in with the liquid.) A whole bird is placed in the baker so that the cleaned cavity of the bird is placed over the inner well. As it roasts in the oven, the liquid in the center well boils, creating steam. This steam enters the poultry breast keeping it moist as the exterior of the bird roasts. Other Creative Vertical Chicken Recipes can be found here.
